Sarawak's Layer Cake





I'm sure that most of you Malaysians (non Sarawakian) have heard about the famous Kek Lapis Sarawak. Few words of impression people always say when they first lay their eyes on the cake...

For Sarawakians, it is a tradition to serve Kek Lapis Sarawak during festive seasons.

Kek Lapis Sarawak (Sarawak Layer Cake), the sight is simply amazing. The taste, is breathtaking! Each layer has different flavour and colour and when combined, simply delicious!

Kek Lapis Sarawak, also known as the multilayered cake is very popular traditional cake in Sarawak. You will encounter the cake during festive seasons and social functions, and the demands never end. Though always the same ingredients are used (namely flour, eggs, butter, sugar, colouring and chocolate) with creative ideas and different baking methods, the taste and looks may be surprisingly different!

Sarawakian modern layered cakes can be divided into two categories: cakes with ordinary layers and cakes with patterns, motifs, or shapes. All must have at least two colors. The cake can be baked in an oven or microwave. The batter uses butter or vegetable oil, milk and eggs, and requires a strong arm or electric mixer to be properly prepared. The baked cake has a high, firm texture and the layers are fastened together with jam or a similarly sticky sweet substance. More detailed cakes often require special moulds to maintain the perfect layer thickness.

So, I want to share about how to make Sarawak’s Layer Cake….Enjoy it ok!!!





A:

25 egg yolks
4 egg white
200 gm caster sugar
180gm Hong Kong flour
1 tbsp ovalette

B:
400 gm butter
4 tbsp condense milk
1 tsp vanilla

C:
green and red colour
a pair of chopstick


How to make Sarawak craft layered cake


1. Whisk A till creamy. leave aside.
2. Whisk B till creamy and combine with A.
3. Divide 2 portions(a) add green (b) add red.
4. Prepared a cake tin of 8 1/2 " X 8 1/2 " square and 4 " deep. , lined with greased-proof paper. Put about 4 spoon of green batter in tin and spread evenly. Bake in preheated oven at 180 C for 3 mins. at the top heat (grill)
5. Take a chopstick and press down cake to mark a few drains. Pour the red batter over and level it. Bake again in same manner. Repeat the process with alternate colour until finish. Last layer bake further 5 mins on top and bottom heat.
6 Cool cake in tin before cutting
7, Keep cake seal in foil and in the fridge for longer period storage
